Turkish Food – Turkish Food Recipes – Turkish dessert – Baklava Yemek – Yemek Tarifleri

Turkish cuisine is a descendant of Ottoman cuisine so it is steeped in history of Central Asian, Middle Eastern and Balkan Cuisines. It has influenced the foods of neighboring countries while maintaining its unique flavor. Although Turkish dishes as a whole have been instilled by culinary influences from the Ottomans, each region of Turkey has its own unique specialities. The Southeast region boasts the best kebabs and baklavas, the Northern Black Sea region make the most if its wealth of anchovies and other fish, while in the Southern Mediterranean the diet is based around fresh fruits, vegetables and olive oil.

To describe what Turkish cuisine is like to someone who has never experienced it, all you can say is “You just have to taste it”. The Greeks, Romanians, Israelies, Iranians, Jordanians and all other surrounding countries have similarities in their menus, but certain dishes are purely Turkish.

If I were to recommend my favorite Turkish dish I would suggest starting with ezogelin soup followed by a coban salata and Iskender Kebap. End your meal with a turkish coffee and baklava.

Here is the breakdown:

ezogelin soup (ezogelin corbasi): This soup consists of red lentils, rice, bulgur, olive oil, butter, onion, garlic, tomato, pepper paste (or tomato paste) salt, pepper, paprika and mint. It is served with lemon wedges. Smooth, healthy, delicious and commonly eaten as a cure for a hangover. Many a partygoer in Istanbul can be seen eating a bowl of this soup in a kebapci (kebab restaurant) after their night has ended. It is also a must to preface the eating of a kebap. (yemek – yemek tarifleri)

coban salata (shepherds salad)- a perfect combination of fresh tomatoes, cucumbers, parsley, onion, flat-leaf parsley, olive oil, fresh lemon juice, salt and pepper. It is light, easy to make and is a perfect opportunity to try the insanely delicious tomatoes in a fresh way.

Iskender kebap – This dish consist of thinly slice lamb from a doner (vertically-skewered meat that turns against hot coals to cook. The layers are sliced as they cook) The meat is usually served on pide bread cut into strips or rice. The sauce is a velvety tomato/butter sauce that is poured on top and served with yogurt on top (or on the side). You will find that most entrees have yogurt in the ingredients or yogurt on the side It is a staple in the Turkish diet. The pide gets all soppy with the sauce and it is irresistible to not eat every last bite. (yemek tarifleri )

With the main course, I would suggest you try a Turkish wine. Turks are not associated with fine wines, but I am sure when you try one, you will be pleasantly surprised at the quality. Turks have been making great advances in their wine-making techniques and grape varieties. With this meal, I would suggest an Okuzgozu wine (literally “oxs eye” due to the large blueish purple grape variety). Kayra is one of Turkeys leading wine producers and a label I like is Kayras Terra Andaolu Okuzgozu red wine. You can buy it online from When in Istanbul, check out Kavists Shop for their Happy Hour and Istanbul Wine Bar.

Last but not least, you must end your meal with a nice strong cup of Turkish coffee and a slice of syrup and nutty baklava. Nowhere have I ever tried a baklava better than they make in Turkey. (yemek tarifi, sarap, raki)

Afiyet Olsun (Enjoy your meal!)

Truffles top the list of culinary delights!

Those of us who have ever had the opportunity to savour truffles, thinly shaved and sprinkled over a salad know how delectable and just down right yummy they can be! However not everyone’s taste runs to the gourmet style of cooking that incorporates mushroom into the mixture. Truffles tend to be an either love or hate specialty, meaning that what becomes one person’s “guilty pleasure” may well be another’s “thanks but no thanks”! Found growing either above or beneath the ground, usually in moist climates, truffles are a mushroom that is uncommon and uncommonly good. Truffle oil found in gourmet dishes around the world

The oil that is derived from truffles is considered to be a gourmet’s delight and is quite heavily used in many dishes that demand high prices in quality restaurants far and wide. While the oil is lower in cost than the solid truffle itself, it is considered to be a valuable asset to many dishes, adding a delectable and delicate flavouring that olive oil or vegetable oil cannot provide. The aroma is pronounced and obvious when heated, making any dish it is incorporated into more costly (on the menu) even though there is little added cost to the chef or restaurant. When added to vodka the truffle oil becomes somewhat of an aphrodisiac type drink that is highly prized by connoisseurs of high quality spirits.

The question has been asked as to how a simple fungus can be so tasty

Mushrooms have a tradition of adding much in the way of flavour to almost any dish or meal. Of the many types of mushrooms known to man the truffle is perhaps the most desirable due to its notable flavours and aromas. There are several popular types of truffle including:

1. Black Truffles (Perigord) or Tuber melanosporum are found in the Perigord region of France. The commonly grow beneath oak and hazelnut trees and are somewhat milder in flavour than the more common white truffle. They are large, with a pleasant odour, and frequently found finely shaved over salads, soups, and dishes containing eggs.

2. White Truffles also known as Alba Madonna (Tuber magnatum) may be found most often in regions of northern Italy, near the city of Alba for which they get their name. Small and pale in colour, white truffles may also be brown or cream coloured often with white marbling. Stronger in flavour than the black truffle, whites are also best served thinly shaved and sprinkled in or over fried eggs, salads, pasta dishes, and added to buttery sauces.

3. A black summer or Burgundy truffle is found growing wild throughout Europe. It is highly prized for its mild aroma and culinary value. Not actually black but rather a grey, the Burgundy truffle is more affordable and has somewhat lower quality flavour wise than the white or black varieties.

4. Pecan or Scorzone truffles can be found growing wild in the U.S. and, as its name implies, grows around pecan trees primarily in the southern U.S. Although they can be seen in gourmet restaurants selling for $100 a pound, the pecan truffle is not considered a delicacy by most connoisseurs of fine dining.

Why not experiment with white truffles in your cooking and buy truffle online when you want to treat yourself.

Top 10 Must-not-miss Thai Food

Thai cuisine is one of the best gourmets in the world. It is well known for the diversity of ingredients, outstanding spiciness and ample medicinal properties. Most of Thai food is cooked and refined with more than two types of herbs or spices which are beneficial to health.

The (mostly unconscious) principle Thai food is the balance of five flavors which are spicy, salty, sweet, sour and bitter. The one indispensible ingredient which is generally used in seasoning a majority of Thai cuisine is fish sauce. Thai food is eaten either as a single dish or with rice. Steamed rice is the staple food although sticky rice is more popular in the north and northeast of Thailand.

Thai food is one of many things that you should not miss while you are traveling in this beautiful Land of Smiles. Since there are numberless delectable Thai dishes, I am writing this guideline for you to select the most distinctive and authentic ones out of the plethora of Thai signature dishes.
The following list is a top 10 rank of Thai food that you must not miss. The consideration and ranking is based on the popularity, uniqueness and authenticity of the delicacies. Here are the winners.

10. Kai Pad Med Mamuang Himmapan (Stir-Fried Chicken with Cashew Nuts)
Even though Kai Pad Med Mamuang Himmapan does not represent the overview of Thai food but it is a very nice treat to your bland taste buds. Since it is by no means spicy or hot, this slightly sweet and salty chicken fried with crunchy cashew nuts is aptly satiating for children or beginners who are not used to spices.

9. Por Pia Tord (Fried Spring Roll)
Fried spring roll is one of the most popular appetizers among foreigners because it is not spicy and comes with sweet and sour dip. Spring rolls are crispy pastries with fried vegetable fillings. Though spring rolls are commonplace in many Southeast Asian countries, Thai Por Pia is different in flavors with a special dip prepared from Japanese apricot.

8. Panaeng (Meat in Spicy Coconut Cream)
Panaeng can be cooked using either pork, chicken or beef. Panaeng tastes like Thai red curry but the coconut milk sauce is relatively thicker and richer. Compared to Thai red curry, Panaeng is mildly spicy and sweet. Paneang is best served with warm steamed rice. There is nothing to dislike about Panaeng expect the fact that it can be too greasy or fleshy for some people.

7. Som Tam (Spicy Papaya Salad)
Som Tam is one of the most popular foods among Thai people for its fiercely spicy and sour flavors. Som Tam, which literally means Sour Pounded, is a spicy salad made from a mix of fresh vegetables including shredded unripened papaya, yardlong beans and tomato. Som Tam is unique that the spicy dressing and salad vegetables are pounded and mixed in the mortar using a pestle. Somtam is usually served with grilled chicken and sticky rice. Som Tam is good for your health that it contains no fat, low calorie and high vitamins. This is a truly authentic Thai dish that will make a great impression. The only reason why Im ranking Som Tam at No.7 (though it deserves higher rank) is its strong spiciness that might leave your tongue burned and swollen. Just say Mai phed (not spicy) to your waiter if you really want to try.

6. Moo Sa-Te (Grilled Pork Sticks with Turmeric)
This tantalizing sweet-flavored grilled pork sticks are refined with rich, juicy sauce made of turmeric and curry powder. Moo Sa-Te makes a savory hors d’oeuvres that will appease any taste buds. These juicy grilled pork sticks are usually served with two saucy dips  one is a mildly spicy thick sauce with ground peanuts, coconut milk and curry powder and another one is a sweet and sour vinegar sauce with chopped shallot, pepper and cucumber to mitigate its oiliness.

5. Tom Yam Kai (Spicy Chicken Soup)
Chicken soup is very good to eat when you have a cold but Tom Yam Kai or spicy chicken soup is a yummy treat that you will fall in love with just in a first sip. Tom Yam Kai is a clear chicken soup seasoned with a blend of chili, lime and fish sauce. The broth is simmered with Thai herbs as lemon grass, shallot and galangal which give it a unique and satiating aroma. My foreign friends order this tasty soup anywhere they go so you should not miss it by any means!

4. Tom Kha Kai (Chicken in Coconut Milk Soup)
Although Tom Kha Kai is another variation of chicken soup, it deserves the No.4 because of its unparalleled taste and popularity. Similar to Tom Yam Kai, the broth is prepared with many types of Thai herbs with the special addition of coconut milk that makes this soup unique. Though the soup is seasoned with chili, lime and fish sauce just like Tom Kha Kai, thanks to the coconut milk, the broth is milder and less spicy. This is probably more liked by non-spicy eaters.

3. Kang Keaw Wan Kai (Green Chicken Curry)
Since we are having three dishes in a row made of Kai, you would have guessed that it is chicken in English. Not that chicken is particularly popular in Thai cuisine; it is usually used in most curry and soup. Kang Kiew Wan, literally translated as Sweet Green Curry, is nicely sweet and slightly spicy and tastes very delightful with a proper blend of the spiciness from green curry chili paste, blandness from coconut milk, sweetness of sugar and saltiness of fish sauce. It is usually eaten with steamed rice or served as a sauce to rice noodle known as Kanom Jeen likewise to how you eat Spaghetti.

2. Pad Thai (Fried Noodle)
This national dish prides itself for its long history traced back in previous centuries. Pad Thai flaunts the authenticity of Thai culinary arts in using only fresh and best ingredients and the well-balancing of the five fundamental flavors. The stir-fried noodle becomes popular because it tastes yummy and comes with a choice to add in a set of seasonings to suit your appetites. Through history, Pad Thai has evolved into two different styles: the classic and the variation. The classic Pad Thai is a stir-fried noodle with eggs, fish sauce, tamarind juice, red chili pepper plus bean sprouts, shrimp and tofu and garnished with crushed peanuts and coriander while another style is relatively dry and lightly-flavored. The latter is easily found in street vendors and dominant in Thai restaurants in the West but the having classic Pad Thai freshly cooked in its original country is a way to go.

1. Tom Yam Goong (Spicy Shrimp Soup)
No other dishes can defeat this renowned Tom Yam Goong as the optimal representative of Thai gourmet. Tom Yam Goong is truly one of a kind with its fierce spiciness and sourness and a blatant use of fragrant herbs including galangal, lemon grass, kaffir lime leaves, shallot, tamarind and chili pepper. There are two styles of Tom Yam; the clear spicy soup and thick spicy soup. The latter is cooked by adding coconut milk or milk to the broth in order to thicken the stock and give the dish a milder flavor. Tom Yam is very versatile and can be made with prawns, chicken, fish and mix of seafood, and mushroom. Tom Yam Goong is the most popular variety of Tom Yam since Spicy Shrimp Soup is the original. Though not very surprising, Tom Yam Goong is definitely a signature dish of Thailand.

Even though it is commonly known that Thai food utilizes many health herbs and spices, there have always been debates whether Thai food is really good for health since they tend to be somewhat greasy. It is important to note that it depends on each dish; some can be highly caloric but many dishes make a good use of herbs. Garlic, for example, is very good healthwise because it can prevent heart disease, high cholesterol, high blood pressure and cancer.

No matter what the food is, the same old concept of moderate intake comes into play. From Mcdonalds burger to Japanese Sushi, a key to optimal fitness is to avoid overconsumption. Thus, a claim that Thai food is mainly coconut-based and fattening should never be an adequate reason for you to still order a Big Mac. Ravish your taste buds with Thai food – tasty and healthy!

This career guide provides a quick and easy reference depicting what most professional chefs say about their culinary arts training and their career. Where should you begin? Where should you study to undergo extensive culinary arts training? How do you become an apprentice in a well-known cooking program? Are there shortcuts? What do well known professional chefs say about their path to success? What do chefs make and what is the career outlook for culinary professionals? (We will continue to update this section to provide additional information.)

Most professional chefs started their careers by spending four years at an accredited culinary art school. The best culinary schools are those that include the Le Cordon Bleu as an important part of their training. (This website provides information from the very best culinary schools. To find a map of cooking schools near you, click here.)

Following culinary school, most career chefs spend at least five years working under head chefs at different restaurants. Typically, they start out as support staff in the kitchen, performing a special task (such as preparing vegetables). Since most young chefs want to be sous-chefs under the top brass at the best restaurants, (particularly in large cities), they often work at several restaurants, acquiring experience under different mentors. Then, they decide to specialize in an area of their primary interests. Professional chefs that are able to withstand the high stress and pressure of the job will find themselves at the helm of a kitchen as head chef. On average, this could take as long as 10 years. To be a head chef means he or she will direct an entire kitchen staff or even start a restaurant.

Unique 80th Birthday Party Ideas for a Young At Heart Eighty Year Old

Are you planning an 80th birthday party for someone who is full of life? Then don’t throw them a typical, quiet, age-appropriate celebration. Instead, make this special occasion lively, fun and memorable. Here are five unique ideas to consider.

1. Take a real trip down memory lane. This party idea goes on the road for reminiscing. Gather your guests into a hired limo, rented bus or caravan of cars and take a tour of significant places in the guest of honor’s life. Start with the house he lived in as a child and travel to places he went to school, worked, lived, attended church, shopped and socialized with friends.

Make a flyer with a map that highlights each of the stops. Include old photos of those places, if you can find them. Give out copies to everyone attending. Encourage the celebrant to share memories about these locations. Arrange for the tour to finish at a restaurant that means something special to the guest of honor for a dinner with all his friends and loved ones.

2. Dance to his music. Most people have a soft spot for the music they grew up with. If the guest of honor is still humming tunes from his youth, then have a retro birthday party. Whether he prefers big bands, ballads or rocking 50’s, play the songs from that era. Decorate to match the time frame. If he’s an energetic eighty year old, you might be able to persuade him to demonstrate some dance steps. Even for those who don’t dance, it’s still a lively atmosphere.

3. Make it about what he likes. A gathering with balloons and cake is nice. But you can go beyond generic and make this 80th birthday party personalized with his interests. If he’s always loved to fish, then plan a picnic by the lake, where he can fish with some of the guests. If she is known for her culinary creations, hire a chef to do a cooking demonstration and ask everyone to bring her a cookbook gift. Does he or she love to travel to tropical locations? Then have a luau. Is he a sports fan? Then decorate with his favorite team and play sports trivia.

You can base the party around his or her favorite television show, hobby, place, beloved pets or whatever captures the guest of honor’s attention and affection. When you create a celebration around a theme, you have built-in entertainment and it shows that you care about what interests him.

4. Bring back the old gang. Track down missing persons from the celebrant’s life. Are there old friends, neighbors and coworkers that the guest of honor has lost touch with over the years? Well, it’s easier than ever to find people who have drifted away.

If you can’t locate someone from the phone book or by asking those who might know the person, try the internet. Check their name on Google and try websites like Classmates and Facebook for their presence. You can also try searching for known relatives. If you find someone related, they may be able to steer you in the right direction. This 80th birthday party could be a nice reunion that would reestablish some long lost friendships.

5. Have an adventure. What did George H. W. Bush do to celebrate his 80th birthday? He jumped out of an airplane! He went skydiving to commemorate his 75th and 85th years, too. Although your guest of honor may not have that on his wish list of things to do, there might be something else he’d love to try. Ask him.

An adventure doesn’t have to be big and scary; just something the celebrant wants to experience. It could be as simple as a trip to a new restaurant, a dinner cruise, tickets to a play or an excursion to the beach or zoo. But he or she may surprise you. Find out if they have any unfulfilled dreams, and see what you can do to make it happen.

So, go beyond ordinary and traditional. Give your favorite octogenarian a unique celebration, designed to reflect his personality. Make it an 80th birthday party to remember!

Understanding The Culinary Arts Training Terminology

No one ever said that a culinary arts training program was easy. It takes real skill and dedication to make it work. It also takes an open mind when it comes to obtaining that sought after job across the country, and then having to relocate.

You have to go where the work is and what is best for you. Culinary students from all of the top schools can tell you that it is not a cake walk. You have to be willing to check your ego at the door and learn all of the technical terms, if you want to succeed at cooking professionally.

For those who elect not to go through any formal culinary arts training program, in order to obtain a culinary degree from one of the best culinary schools, there is still hope to learn those technical terms that plague the novice home chef. Words such as: coddle, poach, julienne, and chiffonade can all be confusing to those not well versed in the kitchen dictionary of culinary techniques.

There are many resources in the culinary community to help you learn some of the most foreign terms. A simple web search of “culinary terms” yields great results; however, just in case you missed it, here are some definitions of the more obscure terms. Chiffonade literally means “made of rags” and is a technique used with a knife on flat, pliant vegetation, such as basil, lettuce or cabbage.

Using basil as an example, you simply stack the pieces of basil on top of each other. You then roll the basil into a tight round tube. The next step is to run your knife down the length of the tube and cut into fine strips. You have now mastered the chiffonade technique.

Did you know that to “coddle” is to slowly cook a dish to just under the boiling point. This term mostly applies to eggs, such as in the poaching technique. There are hundreds of other terms tossed about frequently in the kitchen. No one is expecting you to be a culinary whiz and know them all right off the bat. Culinary students work continuously on learning these terms and techniques.

The next time you come across culinary students struggling to learn the technique of a chiffonade, you will be able to instruct them. You will know something that they do not know yet and it does not matter if you are in a culinary arts training program or if you have a culinary degree.

The whole point of cooking is to learn something new each time you set out to prepare a dish. You will learn from your mistakes and make the whole journey worth it in the end.

* Bachelor’s degree: This is a formal four-year degree that packs together a culinary arts course with a compulsory Liberal Arts course. So, while your major will be culinary arts, you will also have to study traditional arts courses. This helps in getting your career off to a quick start when you actually get a job because by then you will have experience in handling and running a kitchen. This degree also opens up the doorway for you move into administrative and financial sides of the industry.

* Masters degree: You might want to pursue your Masters degree right after your bachelor’s, which would mean another one to two years of studying. As a Masters is based more on academics and theory, many students first try to get some hands-on experience before making the decision to move into management.

Tv Cooking Programmes Drive A Surge Of Interest In Culinary Art Schools

With the increase in number and popularity of television programmes focusing on cooking and culinary skills a large number of people are finding the internet a key place to find tips and information on culinary art schools.

Over 53,000 people last month searched on the internet for information on culinary schools’ and this data is from just one search engine. This increasing trend for people looking for culinary art schools and for careers in the culinary world is believed to be driven by the significant rise in cooking and culinary related programmes which have been aired on television especially over the last few months. This has been coupled with the new high profiles of so called celebrity chefs’, further driving interest in the field.

Anne Sprigpitt owner of says, Over the last few months we’ve seen a significant increase in the numbers of people using our site to find more information about culinary arts schools. Much of this is down to the popularity of TV cooking programmes such as Master Chef’, Saturday Kitchen’ and Great British Menu’, which have been screening on the BBC over recent months.

The main problem many people who search for information on culinary art schools is that they are overwhelmed by the number of different options available to them. For example there are French cooking schools, Thai cooking schools, Le Cordon Bleu schools, Italian cooking schools and many more. There are so many choices they just don’t know where to start looking

My advice to anyone who is looking for a career in cooking and wants to join a culinary art school is to narrow down your areas of interest, so that you identify what area of cooking you are most passionate about and go for it. The most important thing is doing what you love.

Cooking to a very high standard is not easy and requires many hours of dedication, sweat and tears. If the increase in popularity of culinary art schools continues, we should see a new wave of celebrity chefs’ coming through over the next few years as more people see it as a viable way to achieve success and fame.
